FritoLayHubby is a manic football NUT! My favorite part is tailgating! I can do without the games themselves, but tailgating is a MUST whether you are at home, or at the game in person. In fact, hubby is spending all this weekend tailgating with friends. Whether you are with a group of friends huddled outside the stadium or the family gathered around the TV in the den, tasty food and snacks are essential to a “winning” tailgating experience.

      I mix together equal parts sour cream and cream cheese in a large casserole dish. Then I layer the following toppings:
      Diced onions, diced melrose peppers, diced tomatoes, monteray jack cheese, cheddar cheese, sliced black olives and diced green onions.
      Serve with Frito Lay Chips for a taste everyone will enjoy :)

      Take an individual bag of Frito Lay Fritos and add taco meat, cheese, lettuce, and tomatoes.

      Frito Lay Pie

      Ingredients
      Frito Scoops
      3-4 cups shredded cheese

      1 (15 ounce) can canned chili, of your choice or 2-3 cups chili, of your choice
      1/2 onion, diced finely
      diced jalapenos (optional)

      Directions
      1Cover bottom of casserole dish with Frito scoops.
      2Cover Fritos with shredded cheddar cheese.
      3Pour chili over Fritos and cheese.
      4Top with more cheese.
      5Sprinkle with diced onions, and sliced jalapeños (jalapeños are optional, depending on your desired heat level).
      6Bake in 350°F over until cheese is melted and pie is well heated through (can also be zapped in the microwave, as alternative way of cooking).

      Take a can of pinto beans, drain and add 1-2 tsp of Tabasco sauce and mash them. Sprinkle cheese on top and heat up until warm, serve with Frito Scoops.

      Football season isn’t football season without Frito pie!

      3 cups (710 ml) Fritos
      1 cup (240 ml) grated cheddar cheese
      2 cups (590 ml) chili (homemade or canned)
      [edit]Directions
      Preheat oven to 350° F (175° C).
      Spread 2 cups of Fritos in a baking dish.
      Sprinkle half of the cheese over the Fritos.
      Bake for 15 or 20 minutes and cheese is bubbly.
      Add remaining cheese to top of pie.
      Serve hot. Makes 4 servings.

      We always have Chex Mix (homemade) and my kids think no party is complete without my Special Dip (Lipton onion soup) and chips. My most recent favorite is Buffalo Chicken Dip with Tostitos for dipping.

      I sometimes make grilled pepper poppers. Yummy!

      * 1/2 cup (4 ounces) soft goat cheese
      * 1/2 cup (4 ounces) fat-free cream cheese, softened
      * 1/2 cup (2 ounces) grated fresh Parmesan cheese
      * 1/2 cup finely chopped seeded tomato
      * 2 tablespoons thinly sliced green onions
      * 2 tablespoons chopped fresh sage
      * 1/2 teaspoon kosher salt
      * 16 jalapeño peppers, halved lengthwise and seeded (about 1 1/2 pounds)
      * Cooking spray
      * 2 tablespoons chopped fresh cilantro

      1. Prepare grill to medium-high heat.

      2. Combine first 7 ingredients in a bowl, stirring well. Spoon about 2 teaspoons cheese mixture into each pepper half. Place pepper halves, cheese side up, on grill rack coated with cooking spray. Grill peppers 5 minutes or until bottoms of peppers are charred and cheese mixture is lightly browned. Carefully place peppers on a serving platter. Sprinkle with cilantro.

      We LOVE to tailgate.

      Tostitos and cheese dip are a favorite at the games. We will use a combination of Tostitos salsa, cheese dip, and doctor it up with some spicy cooked sausage and some Rotel diced tomatoes. We melt it up and serve it warm at the tailgate in a propane powered crockpot. Of course… Tostitos Scoops are the best way to eat the yummy dip.

      Our family favorite during football season, or any party time is the Chili Pepper Bake. We serve it with Frito Chips. Not too healthy but not too bad:

      Ingredients
      3 cans green chopped chili peppers
      10 oz. grated sharp cheddar cheese
      3 eggs
      3 Tbsp. milk
      Frito chips for serving

      Directions
      Mix eggs and milk with fork.
      Grease loaf pan.
      Layer peppers and cheese.
      Pour egg mixture over.
      Bake 325 degrees for 45 to 50 minutes.
      Serve with Frito Chips.

      really simplistic, but i recently discovered that my favorite (plain or ruffled) lays chip dip is hummus. the lemony flavor and texture work really well with the potato flavor and saltiness of the chips! a simple hummus recipe can be found here:

      BLT Dip 1 pound Smoked Bacon cooked crisp and crumbled
      1 cup mayonnaise
      1 cup sour cream
      Iceberg lettuce shredded
      2 large vine-ripe tomatoes diced
      Fritos

      Steps

      Combine the mayonnaise and sour cream in a small bowl with a snap-on lid. When well mixed refrigerate until serving time. When ready to serve combine ingredients in a large serving bowl by placing one layer of the mayonnaise mixture then a layer of lettuce tomatoes and bacon. Repeat layering as desired. Serve with Fritos

      Pico de Gallo

      3 pounds diced roma tomatoes
      1 1/2 pounds diced red onion
      3 jalapeno pepper, seeded and minced
      1 cup minced fresh cilantro
      1/2 cup sweetened lime juice
      1 tablespoon taco seasoning mix

      Place the tomatoes, onion, jalapeno peppers, cilantro, and lime juice into a large mixing bowl. Sprinkle with taco seasoning and stir gently until evenly mixed. Cover and refrigerate at least 1 hour to allow the flavors to blend before serving

      We like to dip Tostitos in this sauce

      1 can chili with meat
      1 8 oz Monterey Jack cheese

      melt cheese in the chili in Microwave..about 40 seconds, take out and mix thru. May need a few more minutes. Serve with fritos

      I don’t have an actual recipe for this, since I don’t measure, but I like to make oven fried chicken with a crushed Fritos topping.

      Wash and dry your chicken. Roll it in lightly seasoned flour. Dip into beaten egg. Roll into crushed Fritos (use the food processor to crush them if you have one, or put in heavy duty plastic bag and roll with rolling pin).

      Line a baking pan with foil and put a greased cooling rack on top of it. Place the chicken on the rack and bake in a 400 degree oven for about 40 minutes.

      Mini Taco Salads

      1 bag Baked Tostitos Scoops
      2 cups shredded lettuce
      1 tomato, chopped
      1 can kidney beans, drained
      1/2 lb. ground beef
      2 T taco seasoning
      1 cup shredded cheddar cheese
      1/2 cup sour cream (optional)

      Brown ground beef in shallow pan, season and simmer according to taco seasoning directions, set aside.

      Set out Tostitos Scoops on platter. Layer ingredients into chips in order listed above.

      I have the yummiest dip that is incredibly easy and incredibly low cal and non fat!!!

      Take one can of black beans. Drain them and rinse them
      Add one can of corn drained.
      Add one jar of salsa hotness to taste.

      Stir together and serve with frito chips….I prefer the scoops!!

      I make an awesome salsa using canned diced tomatoes, diced green chiles, pepper, chopped green onion, minced garlic and onion, and lime juice and cilantro. Then serve it with Tostitos. It’s always a huge hit and goes so fast!

      dip fritos in it. Its a simple fun football game day dish!

      Layered Mexican Dip
      2 cans Frito Lay bean dip
      1 cup Sour cream
      1/2 cup Mayonnaise
      1 package Taco seasoning mix
      3 Advocados cubed
      2 tablespoon Lemon juice
      7 oz Ripe olives chopped
      1 bunch Green onion chopped
      8 oz Sharp cheddar cheese shredded
      3 Tomato chopped finely
      Tortilla chips

      Spread bean dip on desired serving dish.

      Mix together sour cream, mayonnaise and taco seasoning. Spread on top of bean dip.

      Combine advocado and lemon juice. Layer next.

      Finish by topping with the rest of ingredients in order, excluding chips.

      Serve at room temperature or chilled with tortilla chips

      Feed my Hunger recipe
      1 240g bag of Tostitos Multigrain rounds
      6 tbspn of salsa (mild, medium or hot your choice)
      1/3 cup Tex Mex shredded cheese blend
      100 grams sliced green olives
      low fat sour cream if desired

      Directions
      preheat oven to 350 degrees
      Line a baking sheet with foil
      spread tostitos out
      sprinkle with salsa , top salsa with cheese
      top with sliced olives
      In preheated oven heat until cheese melts about 5 minutes

      Easy Chicken Tacos

      1 store-bought rotisserie chicken
      2 cups store-bought red or green salsa
      8 taco shells
      1 cup (4 ounces) grated cheese
      8 sprigs fresh cilantro (optional)
      1/2 cup fat free sour cream
      1 avocado, chopped

      Remove the meat from the chicken and shred.
      Heat the salsa in a skillet over medium heat. Add the chicken and heat until warmed through.
      Fill the taco shells with the chicken mixture and top with the cheese and cilantro

      I like to make a low fat chipotle spread/dip.

      8 oz low fat cream cheese
      1 or 2 chipotles, finely minced – add more if you like more heat
      1 tsp liquid from the canned chipotles
      1 tsp powdered ranch dressing mix
      milk – enough to bring to proper consistency

      Mix the first 4 ingredients. Add milk to make the consistency of spread or dip that you wish. Refrigerate a few hours to meld the flavors, or up to 2 days.

      Chili Cheese Dip

      2 cans of chili sauce, 1 can of pinto beans (well drained), about 12 oz of Velveeta cheese, and about 8 oz of smoked sausage, diced. Simmer and stir until cheese is fully melted and it’s warm throughout. Serve with your favorite variety of Frito-Lay Tostitos tortilla chips.

      2 8oz bars cream cheese
      1 envelope taco seasoning

      Topping:

      shredded lettuce
      shredded cheddar cheese
      sliced black olives
      sliced green olives
      diced tomatoes
      taco sauce

      Frito corn chips for dipping

      With electric mixer, mix cream cheese and taco seasoning. Spread onto a glass baking dish or pizza pan tha tyou have sprayed with cooking spray. Spread taco sauce on top, and top with topping ingredients. Serve with Frito corn chips for dipping.
